Although I don't make meatballs often, my husband and me both love them. I thought I would share the recipe that I use to make meatballs when I do. This is not the classic Italian tomato gravy with meatballs. It is a delicious dinner with enough tomato relish.
The nutritional information is provided for each part of the recipe. Many will combine this meatball recipe with different sauces, serve it over other noodles than zucchini noodles, and use the thick, veggie-heavy marinara for other purposes. Due to the ricotta, this dish is not suitable for Phase 2 Atkins. It is acceptable for Ketogenic diets. However, Primal-Paleos will not tolerate it.
I love to make large quantities of meatballs, and then freeze them for later use. This recipe yields 20 meatballs, or 10 portions of two meatballs. Adjust your recipe as your needs dictate.
The Lucini Rustic Tomato Basil Sauce (no added sugar) is my favorite. It is made from all natural ingredients and has a wonderful taste. I use it as a quick sauce for pizza sauce and for other purposes. It is a wonderful flavor base to build upon.
It is about $3.99 per jar, if I recall correctly.
MEATBALLS:
1 lb. Ground beef (I used 90% grass-fed lean beef)
1 lb. Ground pork
2 beaten eggs
1/2 c. ricotta cheese
4 oz. cream cheese, softened
1/4 tsp. Each onion powder, crushed garlic seed and dried basil
1/2 tsp. 1/2 tsp.
1 clove minced garlic
1/4 c. Parmesan cheese
MEATBALL INSTRUCTIONS: Heat oven to 350o. Mix all ingredients in a large bowl. Use a fork or your hand to mix until smooth. Roll out the dough in your hands to form large balls measuring 1 1/2 inches. Place the balls on a nonstick baking sheet, or one lined with silicone sheets. Bake at 350o for 30- 40 minutes, or until they are lightly browned and no more pink juices.
QUICK MARINARA SAUCCE:
3 T. olive oil
1/2 c. chopped celery
4 oz. 4 oz.
1/2 c. chopped bell pepper
5 large mushrooms chopped
1 25.5 oz. jar (3c.) Lucini "Rustic Tomato Basil Sauce", all-natural ingredients, 4 NC per 1/2 cup Serving
2/3 c. chopped parsley
3/4-1c. Water, as required
DIRECTIONS TO SAUCE: Heat olive oil in a large skillet or saucepan. Sauté celery, onion, and bell pepper until almost tender. Sauté the mushroom until translucent. Mix in Lucini sauce and parsley. Bring to a boil on low heat. While the meatballs bake, cook on the lowest heat setting. To prevent the meatballs from burning on the bottom of your pan, stir often and add water if necessary to keep the marinara sauce thin.
ZUCCHINI NOODLES "Zoodles": VARIATIONS: Serve over spaghetti squash.
3 medium zucchini (about 10 oz. each)
1 T. olive oil
DIRECTIONS TO NOODLES: You can cut the zucchini into noodle shapes with a hand-held julienne or Vegetti peeler, or a spiralizing device like the counter-top Spirooli, whose handle was broken off. Over medium heat, heat olive oil in a nonstick skillet. Toss in the zucchini threads and cook until translucent. They will become mushy if they are overcooked.
FINAL PLATING Place about 1 cup of zoodles per plate. Add 1/2 cup sauce. Add 2 meatballs to the top. Garnish with grated Parmesan if you wish.
MEATBALL NUTRITIONAL INFORMATION: Makes 20 very big meatballs. Each serving contains two. Two meatballs per serving.
